A Thai inspired unique coconut soup recipe. Not only is this soup easy to make but it is packed with energy boosting nutrition!
Directions:
In large pot bring water to a boil and cook rice. While rice is cooking chop celery, carrot, and green beans. Drain water leaving ¾’s of a litre of water in the pot. Pour coconut milk into pot then add seasonings. Stir and let cook on medium heat for 5 minutes. Stir veggies into pot and place lid on pot. Cook for another 5 minutes stirring occasionally or until vegetables are cooked to your preference, squeeze in lime and top with basil. Enjoy!
