Preheat ½ tbsp coconut oil in a pan on medium heat. Place bread in pan and grill for 1-2 minutes until golden brown. Place ½ tbsp coconut oil in pan, crack egg then cover with lid and cook for 2-3 minutes. Flip egg, add seasonings and let cook for another 30 seconds. Assemble sandwich with sliced tomato, kale and egg. Enjoy!
